I made a 10 gallon batch that was racket to two 5 gallon carboys. One carboy I let sit for two weeks before I kegged and it tasted wonderful two weeks after I kegged it. So it was conditioning for four weeks. The other 5 gallon carboy I let it sit in secondary for four weeks I tasted it soon after it was done carbonating and it didn’t taste as good as the first keg it still needed to sit after it was carbonated.
What happens to the beer after it is carbonated? Is it better for a short secondary and long conditioning after carbonation?
