Hello,

I’m reproducibly getting what I perceive to be large amounts of acetaldehyde during primary fermentation using 100 ml slurry of Conan into 1.073 OG. I know there should be some, but this is enough to make me snap my head back like I’m getting hit with teargas. I haven’t experienced this before. I don’t know if all of this will eventually condition out or not. This is not the peach/mango I was hoping for. Any thoughts? Is it possible my yeast has gone bad? Thanks for any advice and I’m happy to provide further details that would help figure this out (if there is a problem).
 
I know this is an old post but I'm getting the same thing with my IPA 1.057og. I did my first dry hop addition on day 5 and wow green apples! I raised the temp to 68 and I'm hoping it will clean itself up. Anyone else had this problem??
 
I've never used Conan before but I've got some acetaldehyde doing lagers in the past. It should age itself out given a bit of time.
 
If it is truly acetaldehyde, this compound actually has a boiling point of 70 F. Keep it warm -- if you can smell it, that's good, it's off-gassing. Eventually (over a few days) the smell should go away and everything should be fine.

I fermented at 63 and didn't notice it but when I bumped it up to 68-69 is when I noticed it
