Hi, this is the exact cooler I use - the main piece you are interested in is the rubber washer.
My variant here:

and uses IPEX pieces in combination with the rubber washer. Mechanical pressure seals the IPEX to the washer and the washer to the inside of the cooler. I am at least 130 gallons in with no issues

I'll add that if for any reason this rubber grommet/washer is lost or damaged, Home Depot sells them in the hardware area for like $.85, and they are exact matches.
 
That looks like mine. I used the original coleman bulk head + a stainless steel braided supply line + a keg post O ring. Pull back the stainless braid part, heat up the Oring and roll it over the plastic hose part of the supply line. Put the Oring + supply line combo on the inside of the mashtun and pull it back through the bulk head. I did mine 5 years ago and hasn't dripped a drop.
