I'm starting to move my fall cider out of secondary and into bottles- have 5 3 gallon carboys to go. Bottled my first one last month with calculated added sugar to carbonate- nice petillant carbonation when I tried the first one after 4 weeks. Pressed my own apples, campden added, no pectic enzymes. So, 5 of the carboys were done with various lager yeasts, fermented in my 50 degree basement, and cleared beautifully on their own. I have one that I did with Red Star Pasteur Blanc that has been upstairs at 60-68 degrees. Fermented dry, in secondary for 2-3 months. It's still cloudy. So, have 3 cold rainy days coming up. If I cold crash it outside at 30-40 degrees for 48 hours should it clear? And will I still have enough yeast left to bottle carbonate? I think I care more about carbonation than clarity.
