I made Austin homebrews all grain coconut porter recently and it has no flavor. After primary it tasted amazing but after secondary and the coconut it has hardly any flavor and no Coconut flavor at all. The recipe called for the coconut in secondary for about 4 days but since I couldn't taste it at all I left it in for 7 days before pulling it. I used coconuts from a tree in my backyard and shredded them and then toasted them like the recipe said and put two pounds in but still no flavor and it killed the porter flavor. The beer is pretty much un- drinkable. I'm trying to figure out what went wrong. And also does anyone have any recommendations on something I could add to the porter to give it some type of flavor so I don't have to dump it. The only thing I could come up with is maybe a pot of strong coffee. I'm very bummed about this, I was really excited to make a coconut Porter with coconuts from my yard but I guess it's not going to happen.
