I'm addicted to these clearly canadian sparkling water. I was wondering if anyone has made any sparkling water taste anything like them. I read there only 4 ingredients water, flavoring, citric acid, amd pure cane sugar. Kids root beer keg is almost empty and I'm thinking of doing this next. I don't even know where to Start on portions. Any ideas ?

Did you experiment or get anywhere with this? I have been looking at some sparkling water ideas and clearly canadian always comes to mind but I have no clue where to start other than just chuckin juices around until I get somewhere. Would love to nail a really nice black cherry.

Am I reading that right that you carbonate first, then add the Essence flavoring?

If so, any reason why you don't mix the flavoring in at the start before carbonating?

you are going for flavor, pure alcohol, carbonation, and zero yeast contribution.

the easiest way to do this IMO if you are kegging is to NOT use yeast.

use fruit tinctures made with everclear , sugar, water, and force carb.

these come out so so good but they are deadly. and i cant justify keeping for example lemocello spritzer on tap at home.

(also they wont be clear like your clearly canadian) but they will be good. they look really cool and they are super easy to adjust to taste by altering the amount of sugar or alcohol by dilution.

cantelope works very well
lemon (only the rind)
dark cherry
pomello ( a little too bitter and too green looking,)
i have also done mixed citrus (also rinds only)

use a mini keg or 4 liter oxebar to experiment before you make 5 gallons worth of anything.

take the fruit soak it in everclear for a week. strain it very well.
dilute it to humanly consumable abv generally 33 to 40 percent with a 50/50 sugar water simple syrup ( it takes a fair amount of sugar)

this is great straight chilled as a liquer but if you put it in a keg and add water to about 10 percent abv you will rapidly become a full blown alcoholic.

careful .
