My brew cabinet is getting a little cluttered so tomorrow I'm going to try and clear it out some and throw together a recipe. Here's what I've got hanging around:
3lbs light dme
6lbs amber lme
6lbs wheat lame
2.5 lbs 2 row malt
3/4lb biscuit malt
3/4lb chocolate male
3/4lb crystal 75
6 oz fuggles
2 oz cascade
2 oz magnum
1 oz williamette
1/2 oz amarillo
2 packs s-04
1 package nottingham
1 pack s-05.
Based on what I've got on hand I'm planning a barleywine along the lines of Palmer's fighting Urak-hai barleywine from how to brew. Here's my tentative plan:
mash/steep 1 lb 2 row, 4 oz biscuit, 4 oz crystal and 2 oz chocolate for 30 min at 155.
Boil, add all 12 lbs of lme. 1 oz magnum at 60, 2 oz fuggles, 1 oz cascade at 30 minutes.
1 lb dme and 8 oz corn sugar at 10 minutes.
1 0z willamette + 1 oz fuggles at 5 minutes. Pitch with 2 packs of s-04

According to brewtoad this will give me a s.g. of 1.100 which is around where I'm shooting for. I'd like a smooth, not overly hoppy english style barleywine so I'm on the fence about the cascade. Maybe I should leave it out, or add it with the magnum at the start of the boil? More crystal or biscuit?

I'll be brewing tomorrow morning so any tweaks or suggestions about what I can do with this recipe with what I have on hand are more than welcome.
