Can I make wine using canned fruit that has Citric Acid in it?

Hi Mike - Yes. The only problem may be too low a pH. A pH of 3.0 or lower can inhibit fermentation. The REAL issue with "additives" is if they include sorbates. Sorbates prevent yeast from reproducing.
