While you guys are getting out aniseed, nutmeg and chocolate malt, we are preparing for Xmas in the sun (and folks, I can tell you, it can get pretty warm down here). So I was thinking about brewing up something fruity to get rehydrated after a day on the beach. And I wanted to have some local hops in the brew. This is what I came up with and want to run that past you guys to get some input - it's a Saison of sorts, I'd say:

Code:
Batch Size: 6.00 gal
Boil Size: 3.57 gal
Estimated OG: 1.060 SG
Estimated Color: 6.8 SRM
Estimated IBU: 22.3 IBU
Brewhouse Efficiency: 75.00 %
Boil Time: 60 Minutes

Ingredients:
------------
Amount Item Type % or IBU
2.20 lb Munton's Wheat DME (3.0 SRM) Dry Extract 17.24 %
3.53 lb Munich Malt (9.0 SRM) Grain 27.59 %
3.53 lb Pilsner (Pale, NZ) (3.0 SRM) Grain 27.59 %
3.53 lb Wheat, Torrified (1.7 SRM) Grain 27.59 %
1.06 oz Motueka [6.00 %] (60 min) Hops 11.5 IBU
1.06 oz Motueka [6.00 %] (15 min) Hops 5.7 IBU
1.06 oz Pacifica [5.30 %] (5 min) Hops 2.0 IBU
1.00 oz Coriander Seed (Boil 5.0 min) Misc
1.00 gm Grains of Paradise (Boil 5.0 min) Misc
1.00 oz Fresh Tangelo Peel (Boil 5.0 min) Misc
1 Pkgs SafAle German Ale (DCL Yeast #K-97) Yeast-Ale

Mash: 60 mins @ 152 F

Maybe a wee bit high on the OG for a real thirst quencher, what do you guys think?

Cheers! :mug:

You have lots of flavor going on in this beer. Your munich and hops can star in this. If it were mine I would scratch the grains of paradise. Take your tangelo and put in small plastic tub, cover with vodka or rum, place in fridg til bottling. Then use the vodka in the bottling bucket. And use a few tangelos they are small there? Use three or four peelings. And try not to get the white pith in there. Maybe use a grater for the outside of the tangelo unless they have a thick skin. Don't forget to crush the coriander.
