Hello, I have been making plain old straight mead for years. Good enough to drink, at least my friends think so.
I came across your forum while looking for some advice.
I was recently gifted 5 gallons of raw local honey and also 4 pints of Chokecherry jelly. My mind went into overdrive to combine them. I would like to make if a rich chocolate flavor so my thoughts went to a Chocolate extract.....but how much Honey, Chokecherry, and extract to use. A 15% abv very dry recipe would be a good place to start. Any suggestions?
 
Welcome aboard!

I was in Gillette a number of years and made a fair share of chokecherry wine and crabapple cider. I never did master getting a pleasant balance from chokecherries.
