Right, I'm a massive real ale lover, beer brewer, wine maker, chocolate maker, cake baker, Pie maker, I make everything! My next venture, I want to infuse my stout with chocolate, (Milk chocolate or dark chocolate). And basically make stout flavoured chocolate, all I can think to do is to boil my stout after fermentation and add it to melted chocolate, Has anyone got any experience in this or advice? To flavour chocolate you generally use oils but, That defeats the object really, thanks in advance, Luke

Infuse your stout with chocolate, or infuse your chocolate with stout?

There are many brewers who use cocoa nibs in the boil, or in a secondary fermenter, for chocolate flavor.
 
Infuse my chocolate. With stout! I'm aiming to make bourbon aged stout chocolates, Edible beer! I just can't do it, It either won't set or it kind of curdles, I'm beginning to wonder whether it's possible

How much liquid do you normally add to your chocolate? About all I can suggest is adding dark malt extract, which is, of course, not really the same at all. It's easy enough to add to baked goods, but to chocolate itself ...
 
I'll certainly give It a try! I might try boiling the hops to get oil and then try that to get the malt, then just the bourbon flavour to infuse! I'll let you know how it goes, It's amazed me how quickly people respond! Thanks a lot guys

Id never thought of using wort, always the finished product, in all baking and cooking I do, definitely something to try
