I'm making my third Dbl Chocolate Stout but this time I'd like to use Chocolate Nib for . . . . dry nibbing. I assume they need to be sanitized somehow - any suggestions?
 
Vodka. I soaked mine for 4 days shaking the container daily to mix well. 1/2 fifth of vodka for 8 oz of nibs is what I did.

Yikes! I also use 8 ounces of nibs per ~5.5 gallon batches, but I only use just enough vodka to cover the nibs in a small tupperware container, then seal it up and give it a shake once or twice a day for the 3-4 days I let it simmer. I'd guess around one cup of vodka...

I hit all rhe right numbers I just wanted to give it a little kick since I'm waiting until end of may to drink it.. I also added 4 oz of cocoa plain in the boil so I don't want any bitterness.
