I chill my wort while making beer, is this also recommended for fermentation while making wine? Is there temps that make it better/worse?

You chill the must (if it was hot from mixing up sugar in boiling water) before pitching the yeast.

Most wine yeast strains are designed for 59-75 degrees or so, but some strains are fine up to as high as 90 degrees! I tend to ferment all of my wines at 65-70 degrees, the same as many of my ales.
