Hey there, I've taken to refrigerating my ales in the primary overnight for clarity purposes, and the yeast has always come back fine for carbing purposes. My most current ale, however, needs more time to clear. Going on day 3 at ~35F. I'm wondering how long any of you have fridged already-fermented ales, and still had viable yeast in suspension. I know the yeast can survive at that temp, since that's how I store my vials. But if too much yeast falls out of suspension...

WL's Cal Ale 001, BTW.

I never chilled fresh wort, so I don't have any advice on that.

I've often chilled my finished beer, though, for clarity and to help smooth out any flavors. No problems with carbing up, even with cold storage for several weeks before bottling.
