I tried making a fermentation cooler using the pot- n-pot terra cotta method but big box stores don't sell unglazed pots big enough for a carboy. However in the garden I stumbled on the EnduraCool towel ($14) which is a thin, synthetic towel that is extremely efficient at evaporating. It wraps perfectly around the 6-gal Better Bottle and is cooling ten deg below ambient with a strong fan blowing on it. I'm a scientist so I tested with a cotton t-shirt and it only gave me 3 deg below ambient. I included a pic--I just put the carboy in a shallow tub with water to keep the towel wet, and attached it using two paper clips.
