Edmunds Oast is a little fancy, but def has delicious vegetarian options. The popup kitchen at Charlestowne Fermentory often has vegetarian options, but the menu changes constantly.
I was looking at the Edmunds Oast menu, it does have vegetarian options, but while Charred Broccolini is under "plates" not "sides" it still doesn't sound like a meal.

I def got full there off veggies and cheese plates. Don’t remember any vegetarian protein though.

Mex 1 Cantina is the best for veggie options, three locations now I believe. Dellz is also good and Gnome Cafe downtown.
Sesame burger has good veggie burgers and some food trucks around town but often hard to nail them down...
