It has been planed for a while now to brew the Centennial Blonde Recipe that you all know.
This one https://www.homebrewtalk.com/f66/centennial-blonde-simple-4-all-grain-5-10-gall-42841/

If you had to use some other hops instead of Cascade, what would you use.

I want to replace the Cascade with something else.

I have these to choose from:
Columbus 14.5%
Centennial 10.8%
Saaz 4%
Fuggles 4.7%
Amarillo 6.9%
E.K.Goldings 6%
Brewers Gold 5.9%

I made mine with 100% Centennial. I haven't tasted it yet but will soon have it carbonated up. I've made a Bell's Two Hearted clone that was all Centennial and it was one of my favorite brews ever.

Funny I am working on an all centennial recipe to brew this weekend.

since you already got all centennial in the works, id go amarillo or columbus

I have an all Amarillo Rye ale being carbed, first taste tells me its going to fantastic, so Amarillo is promising.

My vote is for centennial and Columbus, or all centennial. I love Mad Hatter and Two Harted, and those are their hop profiles respectively.

So you are saying I should use Columbus for flavor and aroma and bitter with Centennial.

I have only used Columbus as bittering hops

you could do either, but id go with columbus late tho. 1) they're great late, 2) you've never done it, 3) you already got a brew with just centennial late.

Yes. Columbus as late. Nice and fruity, but still very resiny so it isn't "one note" like some others can be.

I am starting to use this recipe to figure out some hop profiles I like w/o having to use too many hops, that way I can make an ipa later that I already know the profile of before I brew. The centennial/Columbus will be my next go at it (I have an all simcoe in the primary right now), so let me know how it goes!

I made mine with all centennial (added 1oz dryhop) and it's fantastic. I didn't think I was a big fan of blonde ales but this might be the best beer I've made this year. I can't see ever not having this on tap at home. It's too popular. Too easy to drink. Too delicious.
