I'm going to rack the Carafa SP III version tonight. The hydrometer samples tasted noticeably roastier, more than I think this beer should taste like. I'll taste it in a couple weeks once it's dry hopped and carbed and make a comparision to some of the bottles I saved from the last batch. My hunch is that I'm going to stick with Carafa SP II for the official recipe.

Carafa SP II is definitely my choice on this beer. Sp III is acceptable, but given the choice I wouldn't. I need to get this into the recipes forum.

I've made this twice using Carafa III, and never tried using Carafa II. Next time I brew it I'll try it.... I'm curious to see what difference it makes.
 
I took the typical ranges for an IPA and darkened it up. From what I recall when doing my research, several other recipes had about 2oz dry hop, which is how I landed on that number. Whether or not it's a good balance for this beer, I'm not entirely sure.
I took a similar approach when creating my recipe. I made a basic ipa first then added most of my dark malt as a steep at the end of the boil.

12 lbs Rahr Pale Malt 2 row (3.5 SRM) Grain 1 80.0 %
1 lbs 8.0 oz Caramel Malt - 80L (Cargill) (80.0 SRM) Grain 2 10.0 %
4.0 oz Chocolate Malt Pale (Thomas Fawcett) (215.0 SRM) Grain 3 1.7 %
0.25 oz Warrior [15.00 %] - First Wort 60.0 min Hop 4 12.2 IBUs
0.50 oz Simcoe leaf [14.10 %] - Boil 60.0 min Hop 5 20.8 IBUs
1.00 oz Amarillo Leaf [10.40 %] - Boil 30.0 min Hop 6 21.5 IBUs
0.50 oz Cascade leaf [8.90 %] - Boil 15.0 min Hop 7 5.9 IBUs
0.50 oz Cascade leaf [8.90 %] - Boil 2.0 min Hop 8 1.0 IBUs

I'm glad you liked it! I was very pleased that my first attempt was more or less what I was shooting for. Any changes from here on out will be very minor. I think it was Smagee that suggested more dry hop, which I will definitely try, though I don't think it's necessary to do so.
