Has anyone used Cassia Cinnamon chips in the secondary of a beer they have brewed. I am trying to get an idea of if it is a good idea to infuse my Mexican Hot Chocolate Stout with a little more Cinnamon flavor, and how much to use. We added cinnamon to the boil, but are dissappointed with the results. My wife picked up some Vietnamese Saigon Cassia Cinnamon Chips, and I was going to add some, along with some vanilla, to the secondary for the last 7 days, then keg it. Any feedback would be greatly appreciated.
