OK I hope I did this right... Extract recipie ... Used 1lb Crystal 60 .. 6 OZ belgian Aromatic 2oz peat..... Soaked it for 45 min at 165degrees ish.. strained then brought to boil.. took it off, and took 5 cups out boiled that down to a nice thick 2 cups.. Added back brought to Boil.. removed heat and proceeded as normal adding DME and Hops and Sugar (it's a heav Scotch ale) was that right? The recipie said to Carmalize 5 cups and that step came before adding extract.

The whole is

1lb Crystal 60
6oz Belgian Aromatic
2oz peated
..............
9lbs Light DME
6oz Belgian rock candy sugar (white)
2oz Glucose Syrup
1.5 oz Kent Goldings (bittering)
.5 oz Kent Goldings (Aroma)
1tsp Irish moss

1084 Irish ale yeast.
 
Sounds about right. I've never tried carmelizing, but I bet that's what they mean by that. Sounds like a good recipe!
