Carboy Cap. Blowing to start Siphon. Infection?!

Ok, Awkward title I know...

I was looking at the carboy caps (watch video), and to me this is just asking for an infected batch! Anyone have any experiences to share? I have never used one of these...

I try very hard to not breath onto my wort/beer, as the human mouth is full of microbes that would thrive on such a substrate.

I've been doing it this way for 20 years without an infection.

But if you're concerned, use CO2 from your keg set-up at a low PSI.

I like your C02 idea... Maybe I am just overcautious when it comes to sanitation.

I've used the small air filters that you can blow through but they have plugged up on me twice for no reason and I can't blow through them at all. I gave up on that and just blow straight into it. I've never had a problem. You will have alcohol at this point, so risk of infection is low.
