So I have a scotch ale that was bottled 2 weeks ago.
I decided to crack one tonight to see how it was coming along.
It made a nice sound when opened and poured with a nice little head, the head died super quick though.
It tastes a little flat but I know scotch ales arent supposed to be super carbonated.
I guess I should give a little more time?

On a side note...shes a tasty one! :D

Probably just needs more time. And a good long chill prior to opening.

What was the OG? Big beers need more time.
How much priming sugar / how big a batch?

I am very new to brewing, but with what I have done most can be overcome by a little extra time. Your beer most certainly for a scotch ale needs well over 2 weeks to get the best taste.
 
Alot of the carbonation gets built up in the headspace of the bottle and has trouble dissolving into the solution until you chill it down to serving temp for 2-3 days, which sounds exactly like what you are describing.

Let the same beer sit in the fridge for a good 36 hours before you serve it to give the carbonation time to dissolve into the solution, and that should solve your problem.
