well its time to rack the cider and i was wondering how long i can let my cider sit and clarify/age and still be able to get it to carbonate with a prime, and would the answer apply to beer/graff as well.
There is no single definitive answer to this. You can let a cider/beer/wine age for months and still get good carbonation if a) the yeast was healthy when it went dormant, and 2) you make sure you suck up a bit when you bottle/keg. For added insurance, you could pitch just a bit of dry yeast. The yeast should be healthy if it had adequate nutrients and oxygen during propagation, and the starting gravity was not too high.
If it's been under six months, I don't think you will have a problem. Yeast can survive a long time, if anything carbonation time my be a little longer, but if you have waited this long....
