My mead went 5 weeks until fermentation was finished. I racked it into 1 gallon bottles for the secondary to clear before bottling. It tasted great even though it was cloudy. But each week it cleared it became more carbonated. I wanted a still mead. What did i do wrong? Starting a new batch and want to make sure I get a still mead. Any way to fix the carbonation on my first batch before bottling? I have already added the potassium sorbate to it and allowing it to rest before bottling.

I agree with what @Maylar said. Gotta have patience with the mead. Time is your friend.😉
 
The first week fermenting, I stir 2-3 times daily to degas. Then let it sit for 2-3 weeks before racking to my carboys. But , as above, time is important- I usually rerack 2-3 times over a 3-4 month period before bottling.
