Is it possible to carbonate the beer and cold store it away, without having co2 on the keggs while storing?

Sure, if your kegs do not leak. Once it is carbed and the head space reaches equilibrium, you are good to go. Connect a gas line every now and then at the same PSI and you will hear the gas go in if it has dropped.

Think about commercial kegs. They're carbonated at the brewery and shipped/stored all over the place.

Like Edwort says, make sure to keep a blast of CO2 every now and again to make sure you haven't lost any gas in a leak.

That makes sense. Iam thinking about a 2nd freezer set up just for storing. Right now I have a 4 keg 4 tap freezer conversion. I have been having some real good, early results with carbonating, kegging. Just some more ideas, thanks..
