carbonated keg

I just started kegging have keg that is finish carbonating. But are not going to drink it before Thanksgiving need to carb another keg
Can I just disconnect the carbonated keg leave in the fridge until I am going to serve it

I do that sometimes. Particularly if I'm wanting to carb one at a higher PSI than I want to serve this other one at. And I only have a single regulator.

Just make sure you have no gas leaks. Or I guess you'll find out . . .

Hook it back up every once in awhile and check your pressure. All will be fine.
