I was at a LHBS which has a server your self malt bins & grinder. I was filling out and grinding up a recipe for a saison. I made the mistake of grinding up caramel aromatic malt (from Best Malz) instead of caramunich malt. I didn't notice until I had left and noticed the receipt. I saw the bin number I had written down, so I am sure I really did make the mistake. My bad for early morning thinking. Not only that but I see that my amount for it is way off too.

So how messed up is my saison recipe? Its now like this
  • 75% Pilsner malt
  • 10% Vienna malt
  • 10% Wheat malt
  • 5% Caramel aromatic malt (was supposed to be 1% Caramunich malt)
I can add to this recipe, I just can't subtract. The grains are mixed in two bags.

MRPIGGY: I made a similar mistake about a year ago. Went on with it, and the beer turned out great. Proceed. Brew on. You're gonna make a good beer.

Thanks. I was thinking of adding some pilsner DME I have hanging around to balance it out. Perhaps I won't now.

True saisonniers will scoff at the use of crystal malt but I'll be honest with you. My best saison used a little caramunich. The brett munched right through it and left a dry but interesting beer.

Is caramel aromatic the same as weyermans caraaroma. If so add some midnight wheat or black printz and make it a black saison. Black saisions are awesome.

Weyermann CarAroma is a very, very dark, flavourful Crystal malt, which is something like 130-170L: https://www.weyermann.de/usa/bmprodukte_neu.asp?idkat=203&umenue=yes&idmenue=269&sprache=10

Caramel Aromatic from BestMalz is around 20L: https://bestmalz.de/en/malts/best-caramel-aromatic/
Caramel Aromatic from Viking is around 70L: https://www.vikingmalt.com/wp-content/uploads/2017/10/VIKING-CARAMEL-AROMATIC-MALT.pdf

It depends which you used, but either way, it will add a bit of colour and malt presence. But seeing this is a Saison, even at 5% it could be too much. But you will make beer, either way.
