I'm a "malt-head" and I think I just discovered a new standard of maltiness: Capital Brewing Co's Capital Square Series Eisphyre. It takes their already fantastic Autumnal Fire Dopplebock then Eis-i-fies it. Smells just like my mashtun. I'm not yet to the point where I can taste something then clone it, so anybody have any advice? I just had Capital's brewmaster, Kirby Nelson, pour me an Eisphyre sample at the Great Northern Beer Fest on Saturday. Any help from someone who's tasted either would be appreciated!
 
Try contacting the brewer to see if he has any tips. I feel like I remember reading that they do decoctions…? It is probably a pretty simple recipe, Munich and Pils to ~1.075, light hopping near the start of the boil. Fermentation, particularly pitching lots of yeast and controlling fermentation temps will be the most difficult part. Eisphyre isn't an exceedingly strong beer, so all you need to do is partially freeze the fermented beer and remove ~20% of the volume as ice (you can do this in a keg and transfer to another keg under pressure, or in a bucket and skim off the ice that forms).
