Can these components be used to make a beer meter?

I continue to wish for an accurate gage to tell me how full my kegs are. I have tried and failed several times to design a meter circuit with these components:

1. 10 segment bar LED display Lumex SSA-LXB10W-GF/LP
2. LED display driver Texas Instruments IM3914-443928
3. Force sensor Measurement specialties FX 1901

Is this possible or have I bitten off more than I can chew? I can follow a wiring diagram, but am lost when it comes to theory and designing a circuit. I am particularly puzzled when it comes to a mechanism to tare the circuit so an empty keg reads zero and a full keg reads full. I suspect I need to fiddle with the resistors on the controller pins 6,7,and 8.

Here's how I hope this could work:

1. Momentary button energizes the circuit ands displays beer level.

2. Place empty keg on load cell and adjust ????? so meter reads zero.

3. Place full keg on load cell and adjust ????? so meter reads full.

The system is now calibrated and ready to be placed into service.
