Can I save half a pack of dry yeast...?

Hey guys,

I'm gonna be brewing a 1 gallon NB recipe kit, and it says to use half of the packet of dry yeast, and trash the rest.

Here's my question, could I rehydrate the whole packet, pitch half of the slurry, and then put the rest in a sanitized jar with boiled water and store it for future use as I would my washed yeast?

I don't see why not if you're sanitary with the whole process. But why not make another one gallon batch and avoid dealing with the whole issue.
There's also the argument of what's 2-4 bucks being tossed.

I'd say either make some other 1 gallon experiment or do what you originally wanted to do.
 
The easiest thing to do would be to pitch half the packet of yeast, then fold the packet over several times, tape it shut, stick it in the fridge, and use it soon on your next batch...If months go by and you haven't used it, then the next time you brew, dump it into your boiling wort, and later the yeast will eat it first before the sugar, and it will help them get cracking. It becomes a yeast energizer. Either way it won't get wasted.
