I just made a gingerbread ale 2 weeks ago and was wondering if it would be ok to bottle. I had planed on taking a gravity reading on Thursday then again on Sunday to see if it changed at all but I never got around to doing that. Would it be safe to bottle it tomorrow?

If you haven't taken gravity samples a few days apart, then there is no way of knowing if it's finished.

Unless you've made this recipe multiple times, -- and you know where it finishes for you -- I would take a gravity sample today and then again in 2 days. If it's the same, then bottle.

If it's only 3-4% it could be finished but I'd still take a reading to see where it is now vs expected FG.
