For those that use Cacao Nibs ...

Do you prefer Raw or Roasted? There are more marked 'Raw' online than Roasted.

If buying Raw and roasting at home - time and temperature please!
 
325° for 15-20 minutes stirring halfway. the nibs i use don't say raw or roasted so not a help there...
 
As I understand it, most Cacao Nibs are roasted to some degree - those considered 'Raw' are lightly roasted around 125F. Perhaps I am wrong.
 
Roasted is definitely better, raw have a harsh edge. 325deg F works for me. I've only done 15 minutes so I don't know about optimum roast time.
 
I used cacao about a year ago, bought it at whole foods from a bin. Not sure if it was raw or roasted - assuming it was all roasted. It was not chocolaty at all. It was almost astringent.

My goal is not to replicate that again.
 
I got my nibs from TJ Maxx of all places they come in a brown circular container and have given a great chocolatey flavor when I have used them.
