Hi all,

I've got 5 gallons of Flanders Red (Roeselare yeast) sitting in a secondary fermenter. Hit my intended gravity before i transferred it to let it sit and sour for 8-12 months. However, I've constantly had issues with the bung popping off. It's happened at least 3 times and I'm not sure for how long each time (hours is likely). I keep trying to secure it and out of nowhere it will pop on me while I'm away at work.

My question is should this beer still be fine enough to let ride for 8-12 months with all of what went on? From what I've read of C02 in the fermenter pushing out against bacteria and everything that I should let it ride but I honestly don't want to have a lost cause hogging a carboy I could be using for the next few months just to have it be a dud.

It is probably fine.

But, why would the bung pop out. I assume it is a bung with and airlock. So you sanitize with Starsan, if so it is slippery so wait until it is almost, but not quite dry, before inserting it.

Or get one and an airlock with as big an opening as possible.

Bung with airlock or solid bung?

I'd wrap the top with saran wrap and hold it on with a rubber band. If it puffs up that tells you that you still have CO2 that needs to get out so poke a tiny hole with a needle, small enough to keep fruit flies or whatever out. You can replace this one that has a hole with a new piece later.

I sanitize the bung and then dry it off to increase the friction, getting pushed down to the lip. I made the mistake of putting it in wet with starsan at first and thought that was the issue but it did the same when dry.

Solid bung. I'll have to try that method with the saran wrap.

Thanks guys!
