I recently discovered a new home brew shop in my area and they have bulk LME at $2.25 a lb....sounds like a great deal to me...iv'e been paying $10 for 3.3 lbs for muntons...also a while back i purchased a old brew shops entire stock of Brewers best kits...for allmost nothing which were a bit out dated but so far iv'e made about 5 of them and haven't had any problems but one the yeast went bad..over the weekend i went down to see if there was anything else left and managed to buy 65 assorted packets of yeast mostly for ales..all for $5....gonna do a wheat beer soon from a recipe i found.after that i'm planning on doing a wheat with fruit of some kind .my question is how do you sterilize fruit,iv'e heard that you put it in your primary then leave it behind when you rack to secondary...could i just add it to the boil or would this cause my beer to be cloudy...thanks.:mug:
 
Neither. Most people pasteurize it and add it to the secondary. Pasteurizing is done by heating to about 160F for fifteen minutes. When I've used real fruit (as opposed to flavor extracts) I've used a tertiary fermenter to let things get as clear as possible.
 
Now when you say "heating to 160f for 15 min", do you mean in the oven? Like toss it on a baking sheet and bake it at 160 for 15, or are we talking boiling or some other method?
 
ya I buy mine in bulk too, I just bring in my litre containers which are about a kg and full them up with light, dark or malto dextrin.
$6 bucks canadian per litre

I was down at the feed store today and was asking about bulk purchases. I asked old Randy:

"Man I am spending a fortune on feed for my poultry empire and must find a cheaper way to 'git-em-fed' you know.
Randy said no.
There is weevil eggs in all feed and they will hatch and ruin it.
Buy a few hundred Lbs to save on gas but,
'feed don't keep!'

I came in from a 5 month stay in the hospital, including rehab, after being murdered the last time, and opened my 5 gallon buckets of LME to check on things and discovered to my horror a layer of white mold an inch high! I used it anyway as there was no alternative.
I got loaded on it but it was pretty bad tasting xxxx.

I used to pay $2.25 a Lb for LME too.
and a couple of years ago was contemplating how to get together with a few others and 'go-in' on a barrel.
Then after my visit with God,
{GOD did speak to me and I ain't kidding}
my 5 weeks surfing the stars so to speak,
and coming home to that dern mold on my LME,
and I looked over and had 6 SIX bottles left after my 'friends' had drank up all my homebrew since I wasn't supposed to make it, and if I ever needed a brew it was then!
I was a changed person,
and went over to DME.
No problem with storage, and it tastes better,
{especially with Fermintis Safale 56 or S-04 yeast.}
I buy it in 55 Lb sacks and that equals 9 batches,
ie. 45 gallons,
and thats 450 12 oz bottles.
or... 18 milk crates of 12 oz' ers
with 25- 12 ouncers in-em.
and as long as I have 8 Lbs for my 8 Lb Hammerbeir, I am fine.

The '8 Lb Hammerbeir' recipe is for LME.
I use 6 Lbs of DME but the name had already 'stuck'.
{8 Lb Hammrbeir has only 6 Lbs of DME,
but don't tell nobody.}

Wow dude.................................................................uuhhhhhhhhhh, if that is farsical, don't eat the worm any more. If you were in rehab for that period of time im am sorry, but i must know what for.

Got myself murdered by three brothers,

I went on a drunk for 12 years till one night I was coming home on my Yamaha 850 triple and then I woke up and I was in this bed,

The Lancaster police dept. reported me dead that morning,
no pulse no heartbeat, dead.
And I went to the hospital in a helicopter.
I survived three neck vertabre broken,
and laying in a ditch all night with a crushed shoulder,
coma 5 weeks and recovery ???
The Sheriffs deputys told me about the Hall brothers:

Back on topic...

Fifteen minutes in an open pot on the stove top with just enough water to cover the fruit, and below boiling temperatures. I've approximated (i.e., guessed) about what was 160F, but using a thermometer is perfectly acceptable.

Jack - awesome. Not quite following how it got in this thread, but wow!
