So i have been brewing this same basic brown saison for the last 6 months.I am hopping that half a dozen adjuncts +1/4 sour mash and a hefty(ish) amount of hops will do this one justice.If not it will get hit with the house sour blend.
I dont want any one adjunct to overpower so i kept everything low.
The sour mash (2 gallons)was a Belgian beer with coriander and orange peel it got 3 days at 110F

it was blended into todays beer and boiled.
6 gallons collected.

my gravity was high its 1.056, but its not to high to bother me.

i might throw some whole fresh ginger( or maybe pasteurized) into the primary just for a few days before bottle/kegging.
