Brown Ale
Recipe Type: Extract w/Grains
Yeast: Wyeast 3068
Starter: Yes
Batch Size (Gallons): 5
Original Gravity: 1.048
Final Gravity: -
Boiling Time (Minutes): 60
IBU: 18
Color: 32 SRM
Primary Fermentation (# of Days & Temp): 21
Secondary Fermentation (# of Days & Temp): 0

Ingredients

5.00 lb Amber DME
0.50 lb Caramel/Crystal Malt - 120L
0.25 lb Special Roast
0.25 lb American Chocolate Malt
0.25 lb Black Patent
0.25 oz Warrior [16.4%] (60 min)
1 Wyeast 3068 w/ starter

I'm aiming for a malty, complex nutty brew. I will be doing a full boil but might NOT do a Late Extract Addition because my previous brew came out WAY hoppier than i had anticipated. Does it look good? Should i remove the black patent, i dont want any sharp, astringent flavors. If i was to do a Late Extract Addition should i up my IBUs by 5 points or so.

Thanks,

Dave

Definitely ditch the BP. Commonly used in Porters, it has no place in a Brown. A little (2 oz.) Aromatic will give you more maltiness.

Thanks David. Would i be better off doing a regular, full boil, or should i risk adding on a Late Extract Addition and crossing my fingers when it comes time to drink, that its not too bitter?

I'm not sure if a late extract addition is necessary considering it's a brown ale and your not looking to make it light in color. I personally would ditch the amber DME and go with light instead. You can get your color from grains. In my last brown I used light DME with 1 lb. crystal 80 and 1/2 lb. chocolate and its dark brown.

I would keep the black patent myself but cut it back to 1oz, replace it with special B, In my most popular brown, the combination of 1oz BP and 2oz SB adds a tasty complexity to the overall flavor

I would keep the Black P but lower the amount, this is my house Brown Ale and i love it, i always have a batch in a keg or in the Primary

Looks good. How is it in terms of Maltiness/Bitterness?
