I have a sample of cherry concentrate. 12 ounces at 68 brix. I am wanting to add this to a beer for a sour, but don't want the brix or SG to get out of hand. Very vibrant cherry flavor so I am not worried about using too little. I want to control the amount of sugars so I am targeting about 8 - 12 points of gravity to provide a nice sourness but not too much.

How much to add to 5 gallons?

68 brix = 1.3421 according to Brewers friend calc. So 3421 x 3/4 pound = 1.2566. 2566/5 gallons = 513.

what am i doing wrong???

If it is 12 Oz by weight then it contains 0.68*12 = 8.16 Oz of extract (231.8g). If it is 12 Fl Oz then you must convert that to cc: 12*29.5735 cc, multiply that by the specific gravity (1.3421) and then by the density of water (0.998203) to get the weight:12*29.5735*1.3421*0.998203=475.43 g. Then take 68% of that to get the extract: 12*29.5735*1.3421*0.998203*0.68 = 322.3 g. The rest (475.43 - 322.3 = 153 g is water.

Assuming that all this extract is sugar then you just consider that you have added 322.3 g sugar and 153 cc water to your wort and use your usual method to compute °P and SG.
