I'm going to open my first homebrew this weekend. Earlier than I should but I'm brewing my second batch and I feel it would be a crime not to at least taste one, probably 2.

I started frequenting this website after I got my kit and I'm kicking myself because I bought a kit with 2 carboys for secondary and following y'alls input I left my first batch in primary for 3 weeks before bottling.

My first batch is a Bavarian Hefe from AHS. 22 days in primary and it will be 13 days in bottles at 75 degrees before I put 2 in the fridge to brew my second batch, a Cream Ale from AHS. I plan on leaving the rest at room temp for a full 3 weeks.

I'm very excited about this hobby, I cannot wait to brew again!! I also have my 3rd kit in the closet.....maybe the carboys will come in handy if I get impatient but the plan is to brew that after I bottle the cream ale. It's an ESB.

I want to thank this entire site for the great information. I will surely post up a picture of my first beer.

Sounds like you've given your beer enough time it should be awesome! Don't kick yourself for having 2carboys. Lol at the bright side of things. You can ferment 2 batches of brew at the same time! I started with 1 bucket and now I have 3 and 3 better bottles too. No they aren't all full. But I'm tryin my damnedest to fill'em up!

It's a pretty cool hobby.
 
13 days is plenty of time. I would have had one open at about 7 days. It's also good to taste them at different times to see how they develop. But at 7 days at 75F, you definately have enough carbonation.
 
i cant stay out of my beer and have opened one at 4 days in the bottle. suprisingly it was carbed but very green.:cross:
 
2 in the fridge now

i saw a few recommendations on opening one after 7 days, 14 days and again at 21 days and note how carbed and conditioned it is - which sounds great but i have an excellent microbrew selection at my local grocery store and really i want to taste my beer at it's best and trust the experience of this site - if 3 weeks is recommended by experienced brewers, who am i to question that? but again today, after golf, there will be brewing and drinking 2 of my very first brewed beers (along with a couple 90 minute dogfish heads)
 
Smaller, lighter beers (like perhaps your cream ale) need less time... so you can feel free to try those a bit early. Your ESB will benefit from the extra time, I imagine.

What up boy?Glad to hear everything is rolling along smoothly.Also glad you're feelin the 90's:mug:..I kegged my DFH90 clone yest..Finished up at 10.7%abv..Damn Amylase Enzyme:drunk:..Anyways,how'd brew day #2 go?
 
haha! yeah.....there was no brew day #2 yet - golf killed me - the heat was freaking ridiculous that i wasn't up for brewing - but the beers were still in the fridge so i had to drink em. the 90's are going down now - that first night it was too much and it's not my favorite beer but i can certainly appreciate them now

i cannot wait to drink my beer after it's fully carbed! i love this hobby

Nice.Its been upper 90s for a month straight up here.Finally cooling off(low 80s)..so you gonna brew tomorrow?The 90's are insane.Nothin like tippin em back on tap at DFH in Deleware...so how was ur beer,even though flat?What did ya taste?flavor profile?

Well it didn't taste like any Hefe I've tasted to this point. So I'm not sure if that's a bad thing or how bad it is......but it was definitely drinkable and honestly quite tasty. My wife liked it too and she's not as bold with her microbrewed preferences. She thought it had a hint of banana flavoring. It was a little more malty and less crisp than I had expected. Not very hoppy. It was, however, easy to drink. Award winning? HA!! drinkable? Absoutely.......which for my first batch is good enough for me. And honestly I've been tasting so many different kinds of beer in the past 6 months, I like it better than some I've tried that's for sure.
