I'm going to open my first homebrew this weekend. Earlier than I should but I'm brewing my second batch and I feel it would be a crime not to at least taste one, probably 2.
I started frequenting this website after I got my kit and I'm kicking myself because I bought a kit with 2 carboys for secondary and following y'alls input I left my first batch in primary for 3 weeks before bottling.
My first batch is a Bavarian Hefe from AHS. 22 days in primary and it will be 13 days in bottles at 75 degrees before I put 2 in the fridge to brew my second batch, a Cream Ale from AHS. I plan on leaving the rest at room temp for a full 3 weeks.
I'm very excited about this hobby, I cannot wait to brew again!! I also have my 3rd kit in the closet.....maybe the carboys will come in handy if I get impatient but the plan is to brew that after I bottle the cream ale. It's an ESB.
I want to thank this entire site for the great information. I will surely post up a picture of my first beer.
