Any advise? Best fermenting temp? When to introduce honey? Kit says to do it at end of boil.

Yeast is wyeast 1010 american wheat, I believe.

Posted this in Extract Forum and got no help. Seeing if I can get more hits in this forum.

Thanks! :mug:

End of boil is fine. Honey ferments out completely, giving you a ABV boost, and a small amount of aroma.

WY1010 fermentation range is 58°-74° F. A honey Kolsch is a fairly delicate beer. For this reason I would ferment in the lower end of the temp range as far as is practical.

Add the honey with 15 minutes left in the boil. If your recipe is half and half LME and DME, the LME could be added at the same time. All LME, then half could be added late. This will have the effect of keeping the color of your beer as light as possible.
