I found some posts talking recipes for a gingerbread stout clone. They were all 10gallon recipes so I made a 10 gallon recipe in brewfather and scaled it down (5gallon). But the abv was 3.5 when it should be around 9.5% so after playing with it for a while, I have an almost 20 lbs grain bill (too big for my mash&boil) and the srm is off as well. Any advice on how to lower the grain bill and decrease dark color?
 
Assuming you're doing your computations using an appropriate mash efficiency for the big beer (large grain bill) on your system, you have two choices if you want to use less grains and get the same gravity.

- Reduce the grain bill and supplement it with Extract in the boil.
- Make a smaller batch size.

Liquid Malt Extract (LME) adds about 36 Points per Pound per Gallon (PPG).
Dry Malt Extract (DME) adds about 44 PPG

Example... if you use 1 Pound of DME in 5 gallons of Wort:

1 Pound x 44 PPG / 5 Gallons = 8.8 Points (call it 9 points)
So, it would add almost 9 points to your original gravity.
