Hey all, I've used Brewers Best kits a few times with good success (IPA, Irish Stout, and Oktoberfest). Last Tuesday I started their German Pilsner kit, pitched yeast Tuesday evening, and transferred into secondary fermentation on Friday afternoon. The color is significantly darker than what I had imagined from all the other pilsners I've been drinking for years. Has anyone used the same kit? It seems odd since there was 1 can of light malt extract and the dry malt extract, but maybe the 1 can was enough to turn the color. Any thoughts?

I'm assuming this was an extract kit? If so, my first and only Pilsner extract kit did the same thing.

If you boiled the extract for any length of time, you helped the extract have maillard reactions (browning as you would see on caramalized onions, the black parts on a steak, etc). Before I went AG, I was never even close to a color any lighter than a 6-8SRM whereas your Pilsner is traditionally going to be in the 3 SRM, roughly.

You didn't notice these maillard reactions in those other beers because they are significantly darker than a Pils (even though the maillard reactions still occured).
