Hi guys,
Quick question, I have just moved to a town where I have found out the water is too inconsistent to be able to make decent calculations for salt additions, any idea what I should do? Maybe start using bottle water so at least I know the minerals and ions present?

Reverse osmosis water, from the "water machines" at grocery stores or at places like Wal-mart is perfect for brewing. Distilled water is a good choice as well, but it may be more expensive than RO water.
 
Try the RO water from the machine at the store, but be aware, that it may not be what you think it is. I live in an area with a water ph of 10.8+. RO filters don't work properly at that level. Mine seems to be an extreme case and you aren't likely to run into that. At minimum get a TDS meter to check the water to see if it is at least 'decent'. You may able to be find a bottled water company in your area that would have a better idea what they deliver.
