Brew Help - Gluten Free Quinua Honey Sweet Potato

What do you guys think I should use for hops? I live in Kansas City, and I can go to a few brewing stores after work this week, but I'm not sure what kind of hops can complement my recipe idea.

So far my ingredients that I have are:
- 2Lbs Quinua
- 2 Lbs Pure Honey
- 3 Sweet Potatoes

I want a very full flavor and I'm trying to cut back on the sweet angle. What do you guys think?

To cut into the sweet, I would tend to go Earthy on the Hop Wheel, heavier on the bittering than flavor or aroma.
