Anyone have any ideas about what Brett strain is in there?

I bought a few bottles. A couple I'll cellar. The other I had last night and pitched the dregs into some starter wort. 12 hours later, this morning, it's already fermenting.

Haven't see anything about the Brett strain they used. However, I have read that they used Belgian Ardness for the primary fermentation on Enjoy After 12/26/15, and Brett is added at bottling. Unless they filtered it before adding the Brett, I assume some of the Belgian yeast will still be alive in there.

I'd also wondered how much of that activity I saw was Brett. It took off pretty fast, so it wouldn't surprise me at all if that was mostly from Sacc. I'll probably let the starter sit for quite a while so any Sacc in it looses much viability and the Brett becomes the prominent candidate when it gets stepped up.

Here's the pellicle after stepping up to a quart.

Nothin yet. It's still sitting sitting after stepping it up. The pellical matured into a thick white wrinkly thing. I tried to get at least a picture to post back with, but it's worthless without pulling the stopper.

I'd like to use it in something still. Just too many other projects. Maybe I'll decant that starter and re-feed it. I'll post back on its taste if I do.

Had a look on the Milk The Funk group and they seemed to think it was Brux, Brett C and Trois.

Got a bottle of this sitting around now and think I'll step up the dregs too.
