It is Cinnamomum cassia and is in the same family with truly a deeper color and more intense flavor.

Well the Trader Joe's Spices of the World brand cinnamon sticks I have in the cupboard are ideal for adding flavor to a caramel apple when used instead of a popsicle stick.
