I didn't know where else to post this but thought you guys might appreciate it. I got the inspiration from FoodInJars.com Drink Week. This is super-simple to do and makes a great non-beer holiday gift! I haven't yet figured out if we will "rack" this down to small gift bottles or give out as is?
We started with 5 quart jars, 7 or so pounds of ripe Rainier cherries from Yakima Washington. Each jar got 1C of sugar and a half scraped Vanilla bean. We filled each jar about 2/3rds full of cherries, then topped with Bulleit Bourbon (any good bourbon will do). This makes an excellent booze for Manhattan's and other bourbon mixers, or straight on the rocks!
After 3 months the jars are looking and tasting great.
