Made this kit Magic Hat #9 clone from AHS http://www.austinhomebrew.com/product_info.php?cPath=178_452_43_256&products_id=1711

Getting ready to bottle it. AHS recommends 3 oz. of apricot extract for 5 gallons.

I don't want a STRONG flavor of apricots more of a "hint" of Apricot flavor. Anyone with any experience with Fruit Extract? Is 3 oz the right amount for a "hint" of Apricot or should i reduce it a little?

I made a textbook cream ale and used Peach extract. I think it came in a 4.5oz bottle, and we used that whole bottle for the 5 gallon batch. Shame on me for poor recordkeeping, but I THINK we used this alone as a priming sugar. But we may have mixed some priming sugar with it.

ANyway, it turned out fantastic. It still tasted like an ale; it by no means tasted like peach kool-aid. There was definately a peach aroma. Some people I let try it said they coudln't even taste the peach but could only smell it. Others could taste it but couldn't tell what it was (until we told them). I personally could taste it as well as smell it, but it wasn't incredibly strong. I'm all out of this stuff so I can't go home and drink it again for a test, but I think it just left a tiny hint of peach left on the finish.

I can't tell you exactly how much to use, but I bet 3oz will be fine. You may have to make the beer more than once.... record how much you use. If you think the 3oz is too strong, do it again next time with 2oz or 1.5oz.
 
Was there any updates to this thread? Yes there are other threads out there that cover a wide range of fruit additions but this one specifically addresses the AHS Clone recipe. I'd love some advice from someone that has used this particular kit before. Was the entire amount of apricot extract too over powering? Did it over carbonate your beer? I've been having some issues with over carb in other batches but I think it's due to my impatience and not giving the yeast a chance/time to work it's magic.
This Magic Hat #9 Kit was in Primary for 9 days, has been in secondary for 4 days and I will Prime/extract and bottle after day 10 in secondary.
