I have a 10% barrel aged Russian Imperial Stout I'd like to submit to NHC. I force carbed it in a keg over a month ago. To my surprise I've had to keep it at about 30psi at around 53F to look, feel, and taste like it's carbonated correctly. I'm guessing with an avb that high maybe the charts are different? That would put it around 3.31vols which seems super high. Other homebrewers have agreed it looks, feels, and tastes just right though. I even used the same regulator to carb up a different beer so I know it's readings are correct.

From what I've read, normal 12oz bottles are definitely good to 3vols but should be good up to 3.5vols so I guess I should be ok. Definitely makes me a little nervous sending three bottles of a 3g batch that's super delicious if they don't make it.
