I'm fairly new to brewing and I brew in the tropics (Panama). I had some issues with my third batch which was a hefeweizen. I brewed my batch 12 days ago and had to leave my hometown to the city for 11 days for work, so I couldn't do gravity readings of my batch. I have to leave again, this time for 2 months and I need to bottle my beer. The regular temp here in Panama is at the 87 F average, but I have an area of my house that stays fairly cool at the 79-77 F (considering how hot is outside), my beer ferments always between 72 and 75 because of the climate in my country (the tropics are horrible). The krauzen already fell and there is no signs of active fermentation (visually), just some tiny tiny bits of krausen floating that came from the sides (where the foam and krauzen was) when I moved my bucket.
Is it safe to bottle my beer or should I get rid of the batch? I just don't want to find any surprises (bottle bombs) when I come back from my trip or leave a hefe in primary for 2 months with the horrible climate of my country.
